Ingredients
1 serving
- ½ cup old-fashioned rolled oats
- ¾ cup unsweetened almond milk, or any plant milk
- 1 tbsp chia seeds
- 2 tsp maple syrup, or to taste
- salt, a small pinch
- ½ cup blueberries, fresh or frozen; see swaps for the other two versions
- ½ lemon, zest only
Method
- Add the oats, almond milk, chia seeds, maple syrup and salt to a 16-ounce jar or container and stir well, making sure no dry oats are stuck at the bottom.
- Stir in the lemon zest, then spoon the blueberries on top. Frozen berries can go in straight from the bag.
- Cover and refrigerate for at least 6 hours, or overnight.
- In the morning, stir. If it's thicker than you like, add a splash more milk. Eat cold, or warm it in a microwave-safe bowl.
Food safety and storage
- Keep the jars in the fridge at 40°F or below and don't leave them out for more than 2 hours.
- We'd eat each jar within 3 to 4 days, the window USDA gives for most refrigerated leftovers.
