Last updated

Short answer: Roast zucchini, red bell pepper, red onion and cherry tomatoes with chickpeas at 425°F for about 25 minutes. While they roast, simmer 1 cup of rinsed quinoa in 2 cups of water for about 12 minutes and let it rest. Toss everything with lemon juice, lemon zest, garlic, olive oil and parsley. It serves 4 in about 40 minutes.
This is a weeknight dinner that also packs well for lunch. The vegetables go on one sheet pan and the quinoa cooks in a pot on the stove at the same time, so most of the 40 minutes is hands-off. The lemon dressing goes on while everything is warm, which helps the quinoa soak it up.
Like every recipe here, this one was developed by Michael Gonzales from standard ratios. The full ingredient list, steps and nutrition estimate are in the recipe card below.
What you need
A large rimmed sheet pan gives the vegetables room to brown instead of steam. A half sheet like the Nordic Ware Naturals aluminum half sheet pan holds this whole batch in one layer. Line it with parchment if you'd like easier cleanup.
You'll also need a medium saucepan with a lid for the quinoa and a fine-mesh strainer if your quinoa isn't pre-rinsed.
What's the ratio of quinoa to water?
Two cups of water for every cup of quinoa. Bring the water to a boil, add the quinoa, cover and simmer for about 12 minutes, until the water is absorbed, then take it off the heat and let it stand covered for a few minutes before fluffing. Our guide to cooking quinoa, rice, lentils and beans has the full chart and where the numbers come from.
Quinoa has a natural bitter coating called saponins. Many brands sell it pre-rinsed. If your bag doesn't say so, rinse it in a fine strainer under running water first.
How do you get the vegetables to brown?
- Use high heat. 425°F browns the edges before the vegetables turn soft.
- Don't crowd the pan. Spread everything in one layer. If your pan is small, use two.
- Cut evenly. Pieces about 3/4 inch across cook at the same rate.
- Dry the chickpeas. Pat them dry after rinsing so they crisp a little in the oven.
- Add the tomatoes whole. Cherry tomatoes go on whole so they soften and burst without turning to mush.
What herbs pair well with lemon?
Parsley is the base here because it's fresh and mild. Dill, mint, basil and chives all go well with lemon too. Use one or mix two, about 1/2 cup chopped in total. Add tender herbs at the end, after the quinoa has cooled for a minute, so they stay green.
What can you add to quinoa to make it more interesting?
- Crunch: a handful of toasted pumpkin seeds, sunflower seeds or sliced almonds
- Creamy: a spoonful of hummus or tahini on top; our homemade hummus works well
- Greens: stir in 2 handfuls of baby spinach or arugula while the quinoa is warm
- Heat: a pinch of red pepper flakes in the dressing
- Briny: chopped olives or capers, but taste before adding more salt
Can you make it ahead?
Yes. It's good warm, at room temperature or cold, so it works for meal prep. Keep it in a covered container in the fridge. Get it there within 2 hours of cooking and eat it within 3 to 4 days, the window USDA's Food Safety and Inspection Service gives for refrigerated leftovers [2]. Add a squeeze of lemon and a little fresh parsley before serving, since the flavors mellow overnight.
Wash the zucchini, pepper, tomatoes, lemon and parsley under running water before you cut them, as FDA advises for fresh produce [3].
What goes well with lemon herb quinoa?
It's a full meal with the chickpeas, but it also works as a side for grilled tofu or fish. For more grain and bean dinners, try our quinoa-stuffed peppers with black beans or chickpea curry with coconut milk, and find more ideas on our dinner recipes page.
Nutrition estimate
One serving (a quarter of the recipe) comes out to about 385 calories, 13 g protein, 15 g fat, 53 g carbohydrate, 10 g fiber, 8 g sugar and 455 mg sodium. We worked that out from USDA FoodData Central values for each ingredient [1], using chickpeas cooked without salt. Canned chickpeas vary a lot in sodium, so the number will be higher if yours are salted; rinsing them helps.

Swaps and substitutions
- Other vegetables: eggplant, cauliflower florets, broccoli or cubed sweet potato all roast well. Cut sweet potato smaller, since it takes longer.
- Other beans: white beans or black beans in place of the chickpeas.
- Other herbs: dill, mint or basil instead of some of the parsley.
- Lower sodium: use no-salt-added chickpeas and cut the salt to 1/2 teaspoon, then add more lemon.
- Make it a salad: let the quinoa cool, add chopped cucumber and a few handfuls of greens.

- 1 red bell pepper, cut into 3/4-inch pieces
- 1 small red onion, cut into wedges
- 1 cup cherry tomatoes, left whole
- 1 can chickpeas, 15 ounces, drained, rinsed and patted dry (about 1 1/2 cups)

- 2 garlic cloves, finely grated
- 3 tbsp fresh lemon juice, about 1 large lemon, plus its zest
- ½ cup fresh flat-leaf parsley, chopped
- ¾ tsp salt, divided

Method
- Heat the oven to 425°F. Wash the zucchini, bell pepper, tomatoes, lemon and parsley under running water.
- On a large rimmed sheet pan, toss the zucchini, bell pepper, onion, cherry tomatoes and chickpeas with 1 1/2 tablespoons of the olive oil, 1/2 teaspoon of the salt and some black pepper. Spread everything in a single layer.
- Roast for 22 to 25 minutes, stirring once halfway, until the vegetables are browned at the edges and the tomatoes start to burst.
- Meanwhile, bring the 2 cups of water and the remaining 1/4 teaspoon salt to a boil in a medium saucepan. Add the quinoa, return to a boil, then cover, lower the heat and simmer for about 12 minutes, until the water is absorbed. Frequently asked questions
What is the ratio of quinoa to water?
Two cups of water for every cup of quinoa. Boil the water, add the quinoa, cover and simmer for about 12 minutes until the water is absorbed, then let it stand covered for a few minutes and fluff it with a fork.
What herbs pair well with lemon?
Parsley, dill, mint, basil and chives all go well with lemon. This recipe uses parsley, but you can mix in any of the others, about 1/2 cup chopped in total.
What can I add to quinoa to make it more interesting?
Roasted vegetables and a lemony dressing do most of the work here. Toasted seeds or nuts add crunch, hummus or tahini adds creaminess, and olives, capers or a pinch of red pepper flakes add punch.
Can you eat lemon herb quinoa cold?
Yes. It's good warm, at room temperature or cold. Refrigerate leftovers within 2 hours and eat them within 3 to 4 days, the window USDA gives for refrigerated leftovers.
Do you have to rinse quinoa?
Only if the bag doesn't say it's pre-rinsed. Quinoa has a natural bitter coating called saponins, and many brands remove it before packaging. If yours isn't pre-rinsed, rinse it in a fine strainer under running water.
